Does anyone else always have sausage rolls at Christmas?

Christmas wouldn’t be the same without sausage rolls in my opinion. My Mum made them for as long as I can remember at Christmas and they have always been very popular in my family.

I love traditional sausage rolls made with pork sausage meat, but I also like the idea of making slight tweaks to make them more exciting.

My are an example of this.

Turkey and cranberry – the perfect Christmas flavours

Who doesn’t associate Christmas or Thanksgiving with turkey? And what goes well with turkey – cranberry sauce!

These are classic flavours that are perfect for this time of year. Although these are familiar Holiday flavours, they are very different from the main event turkey so you won’t get bored!

Although this isn’t a leftover turkey recipe, it is a great way of using up and leftover cranberry sauce that you might have.

Talking about leftover turkey recipes, if that is what you’re looking for my are for you!

shop bought pastry is not cheating

I have heard cooks and chefs say too many times that they don’t usually make their own pastry. I am all for making your life easier when it comes to pastry!

Not only do I buy my pastry, I buy the ready rolled version. Is it just me that really struggles to roll out pastry?! It always ends up misshapen for me.

That is ok if you’re making something like mince pies, but not ideal for sausage rolls!

Which turkey mince is best to use?

Most supermarkets sell turkey thigh or breast mince.

Turkey breast mince is leaner at around 3% fat whereas thigh mince has slightly more fat as you would expect and is 7% fat.

You can obviously use whichever you prefer, but personally I would recommend using thigh mince.

Turkey can sometimes be a little bland. So I really think it benefits from having the extra fat content. It also helps keep the mince moist which is always good!

Adding flavour to the sausage rolls

Although turkey is a tasty, I do think it benefits from having flavour added to the mince as well as the cranberry sauce.

I think some fresh herbs and seasoning really elevate the flavour of the turkey. I have used thyme, but rosemary and sage would also work really well.

if you didn’t have fresh herbs, you could use dried but make sure you use half the amount as in the recipe. I use dried thyme in my .

As well as thyme, I like to add garlic to the mince. I use garlic powder because it is quick and easy but you would use fresh as well.

I would just make sure you mince it really finely as no one wants a big lump of garlic in their sausage roll.

Which cranberry sauce is recommended to use?

I tend to make these Turkey & Cranberry Sausage Rolls even easier and use a shop bought cranberry sauce.

You could definitely make your own. I have my eye on this Smooth Cranberry Sauce which would be perfect for these sausage rolls.

How long will these sausage rolls keep for?

These Turkey Sausage Rolls will keep in an airtight container for up to five days. They are delicious eaten hot or cold.

If you want to reheat them I would put them on a tray in the oven at 180ºC for 10 minutes.

Turkey & Cranberry Sausage Rolls (8)

Can you freeze these sausage rolls?

Yes, they freeze really well and this is what I do every year.

Make the sausage rolls as per the instructions below and line them on a baking tray. Don’t brush them with milk.

Place the baking tray into the freezer to allow them to firm up for an hour or so. Once they are firm take them off the tray and put them in a container in the freezer to completely freeze.

When you want to cook them, take them straight from the freezer and put them on a baking tray. Brush them with milk and bake them for ten minutes longer than the recipe below.

FAQs

Why are my homemade sausage rolls soggy? ›

Why do my homemade sausage rolls have soggy bottoms? To prevent soggy sausage rolls, make sure your oven is preheated before cooking. Ensure to space out the sausage rolls on the baking tray when cooking to ensure there is enough room for the air to circulate and allow them to crisp up.

How long to cook frozen sausage rolls? ›

Cook sausage rolls from frozen or within 2 hours of delivery.
  1. Pre-heat oven to 185˚C/Gas mark 4.
  2. Arrange the frozen sausage rolls on a baking tray with paper with 10cm space between each one.
  3. Bake for 30-35 minutes or until golden brown.
  4. Ensure they are cooked through and piping hot in the centre.

Why do my sausage rolls split when cooking? ›

A common reason for them splitting open is not enough cereal in the sausage mix. It's common to use breadcrumbs or even stale bread soaked in water. If the filling is mostly meat it will shrink when baked and release a lot of fat. Both of these can cause splitting.

How to stop sausage rolls from drying out? ›

Why add cream to sausage rolls? I asked our foodie experts about Curtis' bakery trick and they confirmed that cream softens the breadcrumbs and stops the meat mixture from drying out, as the breadcrumbs won't suck up moisture from the meat and other ingredients.

What if the filling is too wet for sausage rolls? ›

The meat mixture will be quite wet and sticky I found, if you don't like it too wet just add some more breadcrumbs, or else like I did, line your bench with cling film and roll it out on that.

How do you know when sausage rolls are cooked? ›

Bake in the preheated oven for 10 minutes. Check to ensure they aren't burning, then continue to bake until puffed and golden, about 10 more minutes. An instant-read thermometer inserted into the center of a roll should read at least 160 degrees F (70 degrees C).

How long does sausage take to cook? ›

Heat a non-stick pan over a medium heat, then add the sausages. A little of the fat from the sausages will start to come out as they warm up; turn the sausages in the hot fat to coat them. Keep cooking for 15-20 mins, moving them around in the pan and turning them over regularly so they all cook evenly.

Should frozen sausage rolls be thawed before cooking? ›

Freezing - you can freeze your uncooked sausage rolls and simply bake from frozen allowing an extra 10 minutes cooking time. Open freeze (on a tray without any cover) and then once frozen pack into a bag or box. Or freeze cooked ones, defrost and serve cold or refresh in a hot oven for 5 minutes.

Are frozen sausage rolls already cooked? ›

Pre-baked - either thaw and serve or reheat from frozen. Puff pastry encased around seasoned pork sausagemeat; approximately 14cmm, 36 x 104g approximately.

Are sausage rolls best cooked from frozen? ›

You can bake them from frozen, so it's just so handy and the pastry will be at its best that way. Don't forget the egg wash before baking and do allow a few extra minutes of baking time. You can also freeze cooked sausage rolls, then thaw and re-heat this way.

How to stop sausage rolls from splitting? ›

Cut the sausage rolls into a length that suits. Place on a baking sheet and chill again for at least 20 mins or until ready to bake (chilling the pastry now will stop it from splitting as it cooks). Can be made up to a day ahead or frozen for a month. To cook from frozen, just add an extra 10 mins to the cooking time.

How do you keep sausage rolls from sticking to the pan? ›

Line your baking trays with parchment paper or foil before baking. This will act as a non-stick barrier between the pan and the food. 2. Grease the baking tray with butter, oil, or a non-stick cooking spray.

Why chill sausage rolls before cooking? ›

I understand that you want to store unbaked saussage rolls and bake them the next day. IMHO you should be fine as long as the filling isn't too wet. Chill the pastry and the filling well before assembling, this will firm up the fats and reduce seeping from filling to pastry dough. Same goes for puff pastry.

How to stop sausage rolls from going soggy on the bottom? ›

Use Cold Baking Trays

The trays need to be cold when you place the uncooked pastry rolls on them so that they cook evenly in the oven and get a crispy base. Using hot trays will begin to soften and 'melt' the pastry before they're added to the oven - which will lead to soggy pastry.

How to crisp up sausage rolls? ›

Reheat the defrosted cooked sausage rolls at 180C (160C fan) for 8 – 10 minutes.

How to stop pastry from going soggy on the bottom? ›

Brush the Bottom with Corn Syrup or Egg White

During that time, the egg cooks into a glossy layer that will later prevent the filling from seeping into the crust and making it soggy.

How to fix a soggy bottom? ›

Is it possible to fix a soggy pie crust? Yes, it is. Put your pie back into the oven on the lowest rack, as close to the bottom of the oven as possible, for a few minutes. This method will work on all pies with a fruit, vegetable or meat filling.
